制造冶金焦的原理，是把经过适当处理的煤在隔绝空气的高温之下干馏，将煤中所含的挥发性物质馏出。其制造的方法到目前为止共有下列两种：
（1）用蜂巢式炼焦炉（Beehive type cokeoven）来炼焦 这种方法是控制少量的空气进入炉中，把干馏出来的有机物烧掉。利用此燃烧热做进一步的干馏。人们在很久以前就利用这种方式，可是由于此种生产方式造成相当严重的空气污染问题，所以最近数十年已逐渐被淘汰。
（2）用副产品式炼焦炉（By－product cokeoven）来炼焦 这是一个在70～80年前才被发展出来的炼焦方式，目前可以说绝大部份的钢铁厂都采用这种炼焦方法。它是将煤置于一个完全隔绝空气的副产品式炼焦炉中加热干馏，并且把馏出的副产品（by－product）收集，分离煤焦油（tar）和焦炉煤气（coke oven gas）。煤焦油又可用精馏的方法分离出许许多多有机化合物。在以往的时候精馏煤焦油是一项非常重要的化学工业，近二三十年来由于石油化工业发展的迅速，已经使这项工业失去了经济价值。焦炉煤气是一种非常良好的气体燃料，它不但可用于工业上，而且亦可做为都巿瓦斯提供家庭所需的燃料。例如大台北瓦斯公司所售出的煤气中就有一部份是南港启业化工公司所属炼焦炉的焦炉煤气。
图五是一个副产品式炼焦炉的生产流程图。目前新式的炼焦工厂基于经济的理由，已不再设置精馏工场，而把煤焦油当作辅助燃料，充作鼓风炉热能的来源。图六是一张现代化副产品式炼焦炉炉体的照片，炉高大约是七米，上方的粗管子即为煤焦油和焦炉煤气的收集管。原料煤由顶上的加料孔加入，炼制成焦之后由旁边推出。此时焦炭温度非常高，大约在1000℃左右。所以必须喷淋冷水加以消火（Quenching）冷却。冷却后的焦炭加以打碎（Crushing）、筛选（Screening）之后即成为鼓风炉可用的冶金焦。
