一 定义
不锈钢是指在大气、水、酸、碱和盐等溶液，或其他腐蚀介质中具有一定化学稳定性的钢的总称。一般来讲，耐大气、蒸汽和水等弱介质腐蚀的钢称为不锈钢，而将 其中耐酸、碱和盐等侵蚀性强的介质腐蚀的钢称为耐蚀钢，或耐酸钢。不锈钢具有不锈性，但不一定耐蚀，而耐蚀钢则一般都具有较好的不锈性。
不锈钢具有良好的耐腐蚀性能是由于在铁碳合金中加入铬所致。尽管其他元素他，如铜、铝、以及硅、镍、钼等也能提高钢的耐腐蚀性能，但没有铬的存在这些元素 的作用就受到了限制。因此，铬是不锈钢中最重要的元素。具有良好耐腐蚀性能的不锈钢所需的最低铬含量取决于腐蚀介质。美国钢铁协会？(AISI)以 4%铬作为划分不锈钢与其他钢的界限。日本工业标准JIS G 0203中规定，所谓不锈钢即是以提高耐腐蚀性能为目的而含有铬或铬镍的合金钢，一般铬含量约大于11%。德国DIN标准和欧洲标准EN10020规定不 锈钢的铬含量不小于10.5%，碳含量不大于1.2%。我国一般将不锈钢的铬含量定为不小于12%。
不锈钢的耐腐蚀性能，一般认为是由于在腐蚀介质的作用下其表面形成“钝化膜”的结果，而耐腐蚀的能力则取决于“钝化膜”的稳定性。这除了与不锈钢的化学成分有关外，还与腐蚀介质的种类、浓度、温度、压力、流动速度，以及其他因素有关。
二 分类
不锈钢的种类很多，按照我国国家标准GB/T13304—1991《钢分类》以及国际上通用的分类方法是按钢的金相组织划分，分为5类，即奥氏体型不锈钢、奥氏体-铁素体型不锈钢、铁素体型不锈钢、马氏体型不锈钢和沉淀硬化型不锈钢。
此外，按钢中的合金元素又可以分为铬系不锈钢，铬镍系不锈钢、铬镍钼系不锈钢、铬锰镍(氮)系不锈钢，以及低碳不锈钢，超低碳不锈钢和高纯不锈钢等。
不锈钢的用途很广，按各种不锈钢的使用特性也可分为，耐硝酸不锈钢，耐硫酸不锈钢，耐点蚀不锈钢，耐应力腐蚀不锈钢，低温不锈钢，，无磁不锈钢、高强度不锈钢、易切割不锈钢，以及一些专用不锈钢等。某些不锈钢可有同时具有上述多种使用特性。
