什 么是玉石？古人的定义有两种，一咱是“石之美者”，即所有美丽的石头都算是玉石；另一种则是“玉，石之美，有五德”，也就是说，玉是一种美石， 但必须符合“五德“所描述的特性。所谓“五德”是指玉石具备：“润泽以温”、“角思 理自外，可以知中”、“其声舒扬，专以远闻”，不挠而折”，“锐廉而不忮”五种象征君子“仁”、“义”、“智”、“勇”、“洁”这五种德性的特性的美石。 而完全满足这些特性的美石，则只有软玉这一玉石品种了，这也是为什么在古代，软玉一直是士大夫追求的原因。
至本世纪初，翡翠“异军突起” 终于与软玉齐名而被认为是另一种真玉。但严格地讲，它并不完全符合“五德”。虽然翡翠同样具有较高的韧性和更高的的 硬度，以及清越的敲击声，但却在“润泽以温”和“角思 理自外”，可以知中”上有些距离。前人也评价其“多浮光、火气未退”、“性主寒”等。尽管如此，由于其稀少及美丽的颜色，以及世人的崇尚和喜爱，翡翠在现 代成为价格昂贵的“玉石之玉”。由此可见，现代人对玉石的概念与古人有所差别。
有人认为，只有软玉和翡翠（即硬玉）可称为玉（即真玉）， 而其它所有品种的美石都只能称玉石。1997年5月1日正式实施的《珠宝玉石名称》国家 标准中，给出了玉石的科学定义。即“玉石”是“由自然界产出的，具有美丽、耐久、稀少性和工艺价值的矿物集合体，少数为非晶质体”。所谓矿物集合体，就是 岩石，因而只要是具有工艺价值且美观、耐久、稀少的天然岩石，还包括非晶质体如蛋白石和天然玻璃等都可称为玉石。
